Most often we talk about a healthy diet but how often do we talk about a healthy eyesight? We have all heard grandma's tales about carrots and why it was important to keep nibbling on them!

But it is just carrots that are good for eyes? Well no, there are some proteins and vitamins that make an essential aspect of a healthy diet.

Ideally, Vitamin C present in carrots and other veggies, fruits is something that sustains a healthy blood circulation. Then there is Vitamin E and omega acids that you find in kale, eggs, fish, chicken, nuts and alike.

Think of a camera, shuttering away photographs at the speed of 1/10th of second. Woah! That's pretty fast. Now that's exactly what you eye does. Blueberry Cake with Banana and Walnuts :

  1. 5 spoons chickpea flour

  2. 3 spoons buckwheat flour – processed groats in my coffee grinder

  3. 2 spoons chia seeds

  4. 1 spoon hemp seeds

  5. 1/2 spoon ground cinnamon

  6. 1 teaspoon baking powder

  7. 1/2 teaspoon nutmeg

  8. 1 cup milk

  9. 2 eggs

  10. 3 mashed Bananas

  11. ½ cup grated coconut

  12. 2 spoon ground flax seed

  13. 1 teaspoon pure vanilla extract

  14. 1 cup frozen blueberries

  15. 1/2 cup chopped walnuts

Cook it Away:

In a bowl, mix all the flours together and keep it aside. In another bowl blend milk, eggs, banana, sugar, flax and vanilla essence. Mix it well and then add blueberries. Pour the mixture over a pan, sprinkle with walnuts, and bake for 45-50 mins at 375o. Allow the cake to cool 15 minutes once out of the oven.
